I started with already sauteed button mushrooms (with butter, tallow, fresh garlic, onion, and marsala) that I used on some pizza. I then sauteed up some fresh oyster mushrooms and with the buttons, I added to my stock made from leftover roasted chicken. Seasoned with herbs of my liking, adding more marsala, and some beef tallow for richness and body. Heavy cream, a blend of Italian cheeses, a dash of fish sauce for umami, some Calabrian chili oil, and it was ready to go! I wavered about pureeing the whole thing or leaving it as is . I did half and half. I had a huge pot of this and both ways are delicious. Thanks! Eat mo’ ‘shrooms!
